Tofu and Oatmeal Porridge

It's been raining for more than a week now and it's always remind me of my favorite comfort food, lugaw or porridge.  I just so love the flavor of sauteed ginger in that thick warm broth in porridge.  I love the nice flavorful broth of lugaw specially if its made of beef shanks and marrow bones slowly boiled until the richness of the meat and bones flavor the broth.  I love to scoop out the soft gelatinized bone marrow out of its cage and hearthfuly welcome it with my mouth.  The flavor is divine and yes, sinful.  That was during my younger days when I don't have to think of my cholesterol level and my blood pressure.

I asked my mom yesterday afternoon to buy some chicken feet since its been a while since I ate this wonderful dish.  Then she asked me, what's going to be tomorrow's dish.  I pause for a while with nothing in mind.  She said, she'll be buy a whole chicken then roast it tomorrow.  I frowned because I'm getting sicked with roast chicken but still I have nothing in mind.  Then, an idea pop out, chicken inasal.

It's a self-declared day-off due to typhoon Glenda.  It was a long day of strong wind, rain and blackout.  I was on my way to work this morning, thinking that its just a not so strong wind so I can make it to the office.  To no avail, I stood on the street for an hour with an umbrella on my right hand and a soaking wet pants.  I told to myself, Okay I'm fed up with this bad weather and so haggard look and decided to go back home.

I got home last Friday night really, really late and when I opened my Facebook account, I received a message form my sister.  Well, she requested me to bake a red velvet crinkles.  I don't know why but may she ate one and gave her the idea to sent me a request to bake one.  I hope she brings a red velvet crinkles one of this day and I hope you're reading this.

The humble liver spread that we usually adds to Kaldereta for additional flavor is also a great spread for your bread, specially with hot pandesal.  I could still remember my grandfather would buy some hot pandesal in morning and there would always be a liver spread ready to go with it.  I love the taste of the liver spread smothered on my bread.  The light taste of pandesal and the mildly savory, sweet and spicy flavor of liver spread really goes well with each other.
