Poach Egg on a Bed of Fresh Tomato Salsa and Buttered-toasted Bread

I felt bored and hungry doing nothing this Sunday so I decided to cook some snack out of the available
ingredients we have.  Luckily, I found a half-opened tasty bread pack on our table and some eggs, tomatoes and red onions in our pantry / sari-sari store.  Upon looking further and deeper in our fridge, I found unopened Selecta Margarine (I think it's not for sale since I found no price tag on it, sorry mom you can't hide this thing to me, hehehe).

Feeling healthy (or not), I decided to poach the egg instead of frying it sunny side up style.  Made fresh tomato salsa to freshen up the palate and spread some butter / margarine on the tasty bread (healthy?) and toasted it in the oven toaster.

6 slices             Tasty Breads
1/2 pc               Red Onion
2 pcs                Tomatoes
3 pcs                 Eggs
2 Tbsp              White Vinegar
Salt to taste
Paprika to garnish

1.  Bread Toast: Apply some margarine / butter on the bread.  Feel free to be generous if you want your toast to be buttery.  Put in the toaster until golden brown.

2. Tomato Salsa:  Slice the tomatoes in half and remove the seeds.  Chop the tomatoes and red onions.  Mix in a bowl and add salt to taste.

3. Poach Egg:  Boil 2 and 1/2 cup of water.  Add a half teaspoon salt and 2 tablespoon of white vinegar and boil.  Reduce heat after reaching the boiling point.  Swirl the boiling water solution clockwise (or counter-clockwise) and add the cracked egg (it's advisable to cracked the egg in a small bowl before adding it to the boiling water).  Remove the egg when the egg white is already cooked (be careful not to overcooked the yolk, since we want the yolk to be of liquid consistency).

4. To Assemble:  Place the salsa on the toasted bread.  Top with the poach egg and sprinkle some paprika and top with another toasted bread.
