Coconut macaroon is a sweet, milky and light often serve as dessert or snack in the Philippines. It comes in a mini cupcake sized, usually lined with colorful paper cups. It is often available in the local bakeries.

Last week, I found some Granny Smith apples in the fridge. I know I'm not supposed to eat it and I don't. What I realized when I saw those green apples was, it's been a year since I made an apple pie. So, I asked my mom to buy five pieces of Granny Smith apples at a price of Php20.00 each. Much more cheaper compared with the grocery priced apples.
Alarming! I had a spike of my blood pressure this week and it stayed for the whole day. My normal BP is 120/90 and it spiked to 130/100 and 140/90 later the night. I felt a little light headed by still totally functioning. Well I was able to work properly but with the continuous monitoring of the company nurse.

Grilled pork belly or what we call inihaw na liempo in the Philippines is a staple dish during picnics or just a simple Sunday meal to enjoy with the family. We love grilled pork belly! We love how succulent it taste and how juicy it can be when perfectly grilled. We love how it harmoniously compliment the spicy vinegar dipping and how it can be perfectly paired with hot steamed rice.

My sister’s wedding is fast approaching, less than a month from now. Finally, I was able to finalize the details of the wedding favor. Form the cupcake recipe, frosting and packaging.
Yesterday, I went to Chocolate Lovers and bought a pack of the packaging material for the wedding favor. I also bought 400 pieces of the pink cupcake liners to match the motif of the wedding, pink and mint green. They don’t have mint green or green cupcake liners for wedding so I went with the pink one. Since I’m doing vanilla cupcakes, I bought this 110mL of vanilla essence at a whooping price of Php600.00+. Now, that’s times five of the regular vanilla flavor. Anyway, I think that would be enough to flavor the batter and frosting.

I woke up early this morning to marinate the pork belly for grilling, knowing that it will be rock solid so some time is needed for thawing the pork. However, I am not in the mood to grill meat and to even marinate the pork with the usual soy sauce based marinating. I know that grilling pork belly or liempo will not produce those lovely crackling fats that would make one hell of deafening crunchy sound as you take your bite on the meat.

Thin crust pizza! One of the most delicious food created that I don't get tired of eating. I like my pizza thin and crispy. Thin crust pizza is much more flavorful and I get to eat a lot of its toppings more than the thick crust that I felt I eating more bread than savoring its flavor. Ever since pizza was introduced to us, our family prefer the thin crust over the thick one.

It's almost a month from now and my sister's big day is coming. And thank God my ideas for the wedding favor are coming to light. A pro home baker commented from my previous post that the frosting is so big, almost the size of the cupcake surface, so today, I minimized the frosting and added some silver beads to give some element of elegance.

My sister's wedding is nearing and this is the second time I was able to make another wedding favor prototype. Since the wedding's theme were pink and mint green, I decided to make some Green Velvet Cupcakes and frost it with German Cream Cheese Buttercream Frosting.

Sweet, spicy and savory. This is how I would describe this dish. It's plainly simple to do and yet you can get one delicious meal out of it. I made this last Monday as our pack lunch for work. However, I did tossed the fish in the sweet spicy sauce and garnished it with toasted sesame seeds. I paired it with rice and had one Chinese style meal for lunch.

Tofu, one of the most versatile ingredients we can use for our cooking. It can be cooked as an appetizer, as an extender, as our main dish or even a side dish in our drinking session. I love tofu. May it be deep fried to crispiness or steamed and dipped in ginger oil. I'm wondering why there are people who dislike it taste.
Two weeks ago something happened in our family. It's not a tragic one, I don't know with my dad. My sister announced that her boyfriend will mamamanhikan na. Pamamanhikan is a Filipino tradition where in the couple formally announced to each others family their wedding plan and the time when the guy would ask the hand of the women from her parents.

I made the Sauteed Bean Sprout with Crispy Tofu in Peanut Sauce as a vegetable dish to compliment this pork teriyaki I made today. Eating pork teriyaki alone is boring, well, that's according to my taste bud so I made the bean sprout recipe. So, how does the two worked together? Great! The savoriness of the pork teriyaki was balanced by mildly flavored sauteed bean sprout. What amazed me was the pork teriyaki, when dip into the peanut sauce creates a one harmonious flavor of saltiness, spiciness and sweetness. I just discovered the perfect dipping for this pork teriyaki dish.
Its been a while since I cooked a savory dish this past few weeks. Maybe you're asking why? Well It just so happened that I always woke up late that by the time I woke up, my dad already prepared lunch for us. Cooking another dish would be too much for a family of five. So, what's best too cook when main dish is done, dessert. So I've been cooking sweets this past few weeks. Speaking of which, probably next week, I'll have my own special sweet project to deal with so I've got to be ready for my ingredients and other supplies.

I had a tiring weekend last week plus the gloomy weather that made me just want to rest and relax. I made some mini cheesecakes last Saturday to try a different recipe of cheese cake. I did not bother to make a bigger one as I don't have the space in our fridge, so making smaller ones are more handy.

Grilled squid is staple dish during beach outings. It is usually stuffed with onions, garlic, ginger, lemongrass or tomatoes to flavor this sea creature. When grilled right, squid has a soft and tender bite. However, done over cooked and surely you will have this chewy and rubbery consistency.

Its been a one hell of a tiring week for me. I had to attend a two day training of Good Manufacturing Practice held at Alabang at the start of the week. Its about another hour of travel for me from work. I have to finish some of the formulations for my latest work project plus the documentations. Yesterday, so I could have a one whole day rest to recuperate from stress, I already did our laundry until twelve in the morning of Saturday.

Just a disclaimer, this dish is not an authentic Italian dish as I don't have any background with Italian cooking and I'm 100% Filipino. I just named this dish as Italian Style Fried Chicken and Steamed Rice as it was inspired from Restorante Bigoli's dish Italian Chicken and Italian Rice.

Pasta Aglio Olio, simple, delicious and fast to prepare dish that you can enjoy specially if you have unexpected visitors coming to your place. My first encounter with wonderful dish was during my 4th year high school prom night. When pasta aglio olio was served to us, I'm wondering, where is the sauce. I used with the red and white sauce and seeing something that is pasta with no sauce is something new to me that time. I dig in and taste this naked pasta pasta dish and its simply delicious. It has this wonderful taste of garlic and olive oil, with pieces of black olives, chopped parsley and chicken breast on the side. I to myself that this dish is new to me and I liked it.

Our family is so much in love with pizza. We are 5 in the family and we can eat an entire 18 inches pizza in no time. Well, its me and my siblings who eats most of the share. I could still remember during our childhood that we would fold the pizza into two and hurried it into our mouth so we can get most of the pizza. We love Shakey's that time and now, we already explored other pizzas that are delicious too, like Yellow Cab, Sbarro's pizzas and Bigoli's pizzas.

I've been wanting make donut like that of Krispy Kreme's classic donut. However, what I made was a chewy type of donut that is popular in the Philippines' local bakeries. But instead of rolling it in sugar, I dipped it in a classic sugar glaze. This batch produces about 36 pieces of donuts. I also fried the dough from the hole of donut and rolled it in cinnamon sugar.

Yesterday, our neighbor gave us a bunch of yard long beans or sitaw and my mom, whose not around also bought about 2 bundles of sitaw. Now, we have bunches of sitaw to enjoy with. Since sitaw alone would make the dish boring, I went to the grocery to find other vegetable to go with it. I found this zucchini in a stall and grab a medium sized zucchini. It's my first time to use zucchini in my cooking so I told to myself that I just want to try it.

It's holiday! Thanks to our Muslim brothers and sisters We were able to have a long weekend and for me, an early weekend after this 4 days of physically stressful work. I'm so happy I got to get more than enough sleep this day, roughly around 11 hours. Well, I only get not more than 5 hours of sleep during weekdays so this is an achievement.
Sunday, August 4, 2013
I started preparing this dish at around 1:30 in the afternoon. My mom and dad were not around and I thought me and my siblings will be the one to taste this dish. Just about the time I finished cooking this dish my parents arrived. Okay the family is complete for our Sunday afternoon snack.
I love sweets. I love to it sweets every after meal and it's been a while since I ate something that is homemade and fresh from the oven. From my previous post Peach Mango Crumb Bar a la Kusina ni Teds I've been dying to try blueberry instead of the peach mango crumb bar. It just so happened that canned blueberry was not available that time.

Its raining as usual. The weird thing is, it always rain every after lunch. One way to spend time with this kind of weather is to eat some nice hot soup or a nice bowl of warm porridge. I like our local version of porridge known as lugaw squeezed with calamansi to give that tangy flavor to this savory dish. I never get tired of eating this compared with macaroni soup (sopas).
This Saturday, I'm so happy because I was able to woke up early, about 7:30 in the morning, that's what I thought so. Then I figured out that the clock I'm looking at is 1 and a half hour late, okay is 9:00 in the morning already. I told to myself that I would wake up early to fix my website and to do the laundry. Moral lesson, set up the alarm.

I found this recipe while scanning some food porn at Foodgawker and thought its really delicious and easy to do. Guess what? All ingredients are readily available and the plus point is, its really easy to do. Just cream the butter and sugar and one by one pour everything. Bake it and dip it in melted butter and rolled over to the cinnamon sugar mixture and you'll have this sweet lovely snack. Paired it with a cup of unsweetened coffee and you'll have the perfect breakfast or afternoon snack. I got the recipe from Baker Bettie with blog post entitled Baked Cinnamon Sugar Mini Donuts. Click the link to see the original recipe.

Its been a while since I've posted a recipe on Saturday. I've been busy with other stuff this past few Saturday. Hopefully I could write regularly on weekends (fingers crossed).
Pasta, an easy dish you can whipped up under an hour. It was almost a month or two since I cooked pasta in our home. This pasta recipe is so easy and basically, you can throw everything in the pot after sauteing the garlic in olive oil. You can add any meat you want but since I had so much pork and chicken this week, I decided to simply add canned tuna to the dish.

Sweet, soft, buttery and cheesy snack we Filipinos really enjoy is ensaymada. I could still remember my childhood when my mom would buy this coiled bread with margarine and sugar spread on top from a local bakery. Ensaymadas from most local bakeries or we call it panaderia has this slightly chewy bite smothered with margarine and sugar. It comes in affordable price, normally under Php10.00 and paired it with a glass of juice or a small bottle of soft drink and we have a perfect afternoon snack. (I know soft drink is unhealthy but as a child, well up to now but in moderation, I really enjoy it.)

I love the heavenly aroma of cinnamon. Its seems it has the ability to sweep your feet away. Whenever I pass this Cinnabon branch in Robinson Galleria, It makes me go hungry. That's why I'm avoiding that spot, how unlucky it's located near the the entrance and near the escalator. How could I avoid that?

Last Wednesday, while browsing the net and looking for a simple dessert, I stumble upon this Blueberry Crumb Bar by Smitten Kitchen. It looks so good and knowing Smitten Kitchen it must be really good. So I plan to make this crumb bar on weekend.
According to Wikipedia "Stromboli is a type of turnover filled with various cheeses, typically mozzarella, Italian meats such as salami, capicola and bresaola or vegetables. " It is somewhat like a rolled pizza where you can put anything under the sun. My first encounter with stromboli was when we dine in Ristorante Bigoli in Trinoma.

It's Sunday and every Sunday we have a not-so-common dish in our home. Not-so-common meaning a dish that is served once a month. If its' my dad, he'll cook something of Ilonggo origin. If it's me, I usually cook my experiment recipe.

Its my grandfather's birthday celebration tomorrow, Sunday. Mamay, as we foncly called him, a Batangueno word meaning grandfather, is celebrating his 94th Birthday. He may be in his 90's and survived prostate enlargement in his late 80's but I tell you, Mamay is is still strong and kicking.
Wednesday, June 12, 2013
Its my brother's birthday yesterday and we failed to celebrate it as we all got home late and no one was able to cooked for the celebration. So we decided to celebrate it today as today is holiday because its Philippines Independence Day.

It's Saturday and Saturday is wash day. I woke up early today so I could finish the laundry early and to make good use of the sun. What I need before doing this choir is a good heavy breakfast. Doing the laundry is an energy consuming and sweat breaking activity to start the day.

College years were the most memorable year of my drinking spree era. We (my high school friends) would get together in our friends house and spent the whole night drinking until the sun was already up and we would here the familiar sound of the roosters indicating it's already morning. We drunk different kinds of alcohol from vodka, gin, tequila and of course beer.

Last Sunday was a really hot day. A little movement and you'll get all sweat. And yes, I did baked a couple of loaf of carrot cakes. What's really agonizing baking in this time of the year is the hot environment and the heat from the oven. But what determined me to bake these carrot cakes is simply my love for sweets. Every after meal, I just want to bite on something sweet and if a proper dessert is not available, well, a small pack of sandwich biscuit will do.

Ensaladang labanos or radish salad is a thinly sliced radish mixed with onion, garlic and tomatoes. It compliments well with fried foods specially fish. I can't get enough of this specially when this is paired with fried fish. I could plenty of rice when this is served. I remember a friend of mine who tasted it and said that it's like Pinoy version of the Korean kimchi.
Sunday, June 2, 2013
It's Sunday morning and I woke up around 9 o'clock. We usually don't cook breakfast specially on weekends as we usually wake up on brunch time. My parents' usual breakfast is a hot pandesal or bread dipped in hot coffee or a simple bowl of oatmeal. I felt a little hungry and decided to make scrambled egg sandwich.
Brownies, a delicious treat that reminds me of my childhood. Before, I can only buy freshly baked brownies in a panaderia (a small bakeshop where different affordable breads can be bought) at a price of Php3.00 to Php5.00 a slice. That time, the only brownie type I know was the cakey type with roughly chopped peanut toppings.

I've been watching Gordon Ramsay's videos in Youtube this past few days and as I watch every videos of his, makes me salivates more on his dishes. What I'm eager to try if his Pressed Pork Belly but given the circumstances today I only have 3 hours to make it and Ramsay's process will took about 8 to 9 hours. Given this third of the whole cooking time, I have to recreate his dish but got some ideas from the original recipe.

I've been wanted to make bread at home but too intimidated by how it is made. Blooming the yeast, mixing, kneading, resting, kneading and so on. Specially the kneading part. I'm too lazy too do this shoulder-pain-making-step.

Happy Mothers Day to all mothers and soon to be mothers! Today as we celebrate this special day dedicated to our mom, I decided to make our lunch extra special by cooking stuffed roasted pork loin. This is the first I cooked this dish. Actually, this dish is inspired by Gordon Ramsay's Roasted Pork Loin with Lemon and Sage. However, I chose a leaner cut of pork loin (no fats at all), well, my parents are not getting younger anymore.

Fruit salad. A Filipino staple dessert during town fiestas, special occasions or just simply an ordinary day. Our fruit salad is typically consist of fruit cocktails, all purpose cream and condensed milk and chilled before serving. A great dessert to battle this so hot summer. What if this chilled dessert is serve hot? It's still a perfect dessert.

We had siomai last Tuesday and I saw this afternoon that there were lots of wanton wrapper left in the fridge. Well, I saw two opened wanton wrapper pack, one was I think couple of weeks ago (that went straight to the bin) and the other one was the pack used this week. Buying ingredients and leaving it in the fridge until roots grow on it is so waste of money and fridge space.

Buffalo Chicken! Fried Chicken Coated with hot and spicy chili sauce. Perfectly paired with rice or a bottle of ice cold beer. My friends and I have this addiction to buffalo wings. When we go out for our chill-mode-boys-night-out, when we just want to relax and talk on the new news about us, our destination is Wingman along Malugay Street in San Antonio, Makati. They have this wide selection of fried chickens and buffalo wings of different levels of spiciness. We've tried their levels of spiciness and preferred to avoid the last two upper levels as we want to enjoy our chickens.

We have this saying in the Philippines during one's birthday to eat pancit or stir fried noodles for long life (Kumain ka ng pancit para humaba ang iyong buhay.) That's why pancit is a common dish during birthday celebration. Aside from the belief of life longevity, pancit is so simple to prepare. Just stir fry everything, add the noodles and season with soy sauce and pepper.
Aglio e Olio means "Garlic and Oil" in Italian. This is a very easy dish that you can whip up in less that 30 minutes. Great when we have unexpected visitors. The good thing about this recipe is, all the ingredients are found in our kitchen (that is for the aglio e olio minus the crab stick and parsley).

This is one of my experiment on chocolate cake. The original recipe entitled Home-made Moist Chocolate Cake for My Mom's Birthday was tweaked to lessen the tonsil-killing sweetness of the recipe when dulce de leche is incorporated into the recipe. Also, as you can see, the presentation of this cake is far more professional looking than the original recipe.

It was my birthday last April 12 and my mom cooked a kilo of Pinoy-style Spaghetti Sauce. It just so happened that the sauce is not enough for a kilo of spaghetti. So what was left, about 40 grams of cooked pasta with no sauce to enjoy with left in the fridge.
Tuesday, April 9, 2013
It really is summer. Its not because its already April but because its insanely hot. This kind of weather makes me not want to move at all and just stay in front of the electric fan (even though it seems as if I'm in front of a blower). A little movement and you get sweats. More movement and you sweat a lot.

To be honest, I don't know how to call this dish. It's somewhat like a buchi or mochi with jackfruit and purple yam filling but cooked like ginataang bilo-bilo way.
I've been interested in cooking mochi and even watched different videos on Youtube for some tutorials. However, out of nowhere, it just cross my mind to combine a mochi recipe and a ginataang bilo-bilo recipe. I love ginataang bilo-bilo because of its sweetness and jackfruit flavor and the sticky, soft and chewy rice dumplings. Filled these dumplings with purple yam jam (halayang ube), I think, will make it more enjoyable.

If your remember, I made this Gourmet Tuyo version and as promised and as part of my Mom's Birthday Celebration, I'm making this Tuyo Pizza (Everyone is fasting on meat so this is another way to enjoy pizza.)
This version of pizza is yeast free and what I did was made the dough, grill it on a greased pan and top it with sauce and everything and pop it in the oven until the cheese melts. Easy, just took me about 30 minutes to finish (well, an hour because I did photos for my blog).
